My mom and I traveled to Europe about eight years ago. My mission while I was there; to soak in everything I could about desserts and the traditional European art of baking. But, I was also committed to defining my own style by putting a modern twist on an art that was developed centuries earlier.
While observing the responses customers had as they stood in line at corner bakeries, I watched their expressions as they savored the flavors in the pastries that they were eating; I soaked in the atmosphere that all of these experiences were creating, and I saw Croissants do something very different than the rest of the offerings in the pastry case.
I sat with that image, honed the skill, and brought my own style to the table. What was once a concept has turned into much more than lines of customers, waiting to grab a freshly baked Croissant or Pain au Chocolat; the concept then turned into Four Turns Baking Co.
Real quality is rare. There’s a huge void in the marketplace and artisanal Croissants are nearly impossible to find. While tons of pressure comes with being the first to serve a discerning customer, there comes an equal amount of excitement in realizing that I have that privilege.
I want my customers to value my product as much as I value my customers, and want them to soak in and indulge in the experience of eating a perfectly made, hand-shaped Croissant. It doesn’t get better than experiencing the fragrance of butter as it lofts from an oven and into a morning kitchen. I want my customers to feel the warm, crisp, perfectly baked exterior and enjoy the layered definition in our artisanal Croissant’s rich interior.
